San Gemini is naturally popular for its great mineral water springs: for centuries San Gemini mineral water has enjoyed a consolidated reputation for its curative properties.
This reputation is both on account of the therapeutic properties of the water itself and the result of the natural and un-spoilt environment that surrounds the source of this special water (Mounts Martani and Umbrian Apennines).
It was not until the beginning of the nineteenth century that the locals started to take note of this natural resource in a new way: the municipality began to explore the possibility of commercially developing the mineral water springs.
In the early nineteenth century, there were two known springs in San Gemini: the ‘Acquaforte’ and ‘Acqua sulfurea’ springs. The latter, used for bathing, was eventually abandoned. However, in 1837, the town council requested a chemical analysis of the waters of the ‘Acquaforte’ spring – the first step in developing water related industry.
It was later declared by the expert that the waters of San Gemini had a high level of oxygen, free carbonic acid.
In 1887, the government granted Luigi Santucci and Settimio Segarelli a permit for them to use the water spring ‘acqua acidula’ as a water source for their beverage factory.
At this point the Societa` dell’Acqua Minerale di Sangemini was formed: it consisted of notable locals with ties to larger professional communities.
